The Best (and Easiest) Simple Salad

So tonight I made a very simple salad to go along with some turkey burgers and sweet potatoes. I didn’t have much in the house and was initially annoyed, but this salad turned out to be great! I gave the kids the option of putting cheese on theirs because I didn’t particularly want any on mine. You can add any kind of protein to this, maybe some chickpeas, and it becomes a great lunch.

HM’s Simple Simple Salad

romaine lettuce

cucumber

fresh basil

thin sliced, unsalted almonds (from trader joe’s)

1 tbsp red wine vinegar

2 tbsp olive oil

1 tsp dijon mustard

salt and pepper

Here’s what you do:

Chop up lettuce, cucumber and basil and put them in a bowl. Sprinkle with almonds. In a separate bowl, whisk together vinegar, olive oil and mustard. Grind fresh pepper and salt onto salad and pour dressing as desired. Then enjoy!!
